About the Chef

I’m a purveyor of all thing delicious; French cheese, cold cut meats and baked sweets. I love to cook with fresh, good quality ingredients – especially vegetables, herbs and fish. We have one of the largest selections of blue cheeses in the city – about 20 different types! Goats cheese is interesting because it can taste different based on the goat’s diet. There are goats in a province near Cannes that eat lots of aromatic herbs and lots of small flowers – it actually makes the milk taste more flavoursome. In other provinces, the goats graze on lush grass, which makes the cheese taste really fresh with an almost grassy, natural flavour.
