About the meal

Massaman is a southern Thai dish, influenced by Malay and Indian cuisine. This curry is most commonly made with beef, Vegetarians and vegans have created their own versions of this dish. The flavours of the massaman curry paste come from spices that are not frequently used in other Thai curries. Cardamom,cinnamon, cloves, star anise, cumin, bay leaves, nutmeg and mace. These are combined with local produce such as dried chili peppers,cilantro seeds, lemongrass, galangal, white pepper, shrimp paste, shallots and garlic to make the massaman curry paste. This paste is first fried with coconut cream, and only then are meat, potatoes, onions, fish sauce or salt, tamarind paste, sugar, coconut milk and peanuts added. Massaman is usually eaten with rice.

Born and raised in Thailand, Liden received her culinary training both in Thailand and in Switzerland. From 2003 to 2010, she learned to master her skills at the Berghotel Leiterli hotel in Lenk im Simmental, Switzerland. Becoming increasingly interested in Thai cuisine, she also took a Thai cooking class in Chiang Mai and a Thai carving class in Chiang Rai to brush up on her techniques.

Liden is the kind of chef who enjoys experimenting with new dishes. All the ingredients she uses are handpicked, to ensure the dishes are of the best quality and flavor.
